A quick and easy avocado-based lunch option that is extra healthy! Without the bread, it can make a really tasty dip to go with snacks too.
Ingredients:
1 Can Chickpeas
1 Avolands Ripe’n’Ready Avocado
1/4 Cup Chopped Coriander
1 Lime, Juiced
Seeded Brown Bread
Method:
- Rinse and drain the chickpeas. Place on a paper towel.
- In a medium bowl, using a fork or potato masher smash the chickpeas and avocado together. Add in coriander and lime juice.
- Season with salt and pepper, to taste.
