1 medium shallot, thinly sliced crosswise & separated into rings3 tablespoons of fresh lime juice
3 tablespoons of extra virgin oil
1 tablespoon thinly sliced fresh basil
1 tablespoon thinly sliced fresh mint
1/2 teaspoon salt
1 cucumber, thinly sliced
1 ripe & ready avocado
Method:
- Toss shallot rings with lime juice in a large bowl, let stand until softened (+- 10min )
- Whisk oil, mint, basil and salt
- Add cucumber, toss to coat
- Leave the cucumber to marinate in the dressing, tossing occasionally until softened ( +- 10min)
- Place cucumber slices on a platter, top with sliced avocado
- Drizzle the dressing over the salad
- Serve and enjoy
